The catered dinner at the Bancroft Hotel was a comforting meal with my lovely Claremont Court neighbors.
First course - mixed greens with pears, gorgonzola and candied pecans
Second course - pistachio whole grain mustard rubbed lamb with pesto, couscous, ratatouille vegetables and a pomegranate reduction sauce /or
grilled wild salmon with herbs, soft polenta, spinach and vinaigrette / or wild rice, pine nut and feta stuffed portobellinis
Dessert - lemon tart or chocolate truffle cake
According to Specialty Produce, "portobellini is the latest new Agaricus to be marketed, a cremini mushroom that has been picked just after its veil has broken, meaning its cap has just separated from the stem. Offering a rich meaty texture, its flavor is delightfully earthy."
